To truly appreciate Japanese cuisine well, diners must open up all senses and be aware of the world around them. For the chef, this means spending much time and thought on the ingredients’ quality, balancing of flavours, complementing texture and creating the right presentation - colours, style and garnishes. Grab your diner’s attention with every bite.


In this WSQ certified Complex Japanese Cuisine Preparation course, you will walk away with technical know-how to prepare 7 advanced speciality Japanese dishes ranging from Mushimono (steamed dishes), Donburi, Nabemono and a variety of complex sushi. A step up from the Standard Japanese Cuisine Preparation course, you can expect coherent explanations for every step of the cooking process from the start to finish.

ENTRY REQUIREMENT: 

• Age 21 and above

• Have basic knowledge and experience of Japanese cuisine preparation or completed standard Japanese cuisine

preparation course (Level 1 or equivalent)

• Workplace Literacy & Numeracy level: At least level 2 (listening / speaking and reading/writing)

Understand the recipes and methods of preparing different types of specialty cuisine dishes and prepare mushimono

Understand the artistic balance of complementary flavours, colours, shapes and textures in garnishes, food product and plate and prepare donburi

Understand the methods of presenting finished products and prepare nabemono

Understand the methods of assessing suitable colour, height, shape and texture in finished products and prepare complex sushi
